High Protein Cottage Cheese Tomato Soup

Ingredients
  • 2 tablespoons ghee (or butter)
  • 1 large yellow onion (diced)
  • 4 teaspoons garlic (minced)
  • 56 ounces diced tomatoes (blend first if you prefer a smoother soup)
  • 2 cups chicken broth (organic)
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 teaspoons oregano (dried)
  • 1/2 teaspoon thyme (dried)
  • 1/4 cup fresh basil (chopped)
  • 1 cup cottage cheese (blended until smooth)
  • Heavy cream (optional for topping)
Instructions

    Heat the ghee or butter in a large Dutch oven over medium to medium high heat.

    Add the diced onion and cook for about 5 minutes, stirring occasionally, until soft and translucent.

    Add the minced garlic and cook for another 2 to 3 minutes until fragrant.

    Stir in the diced tomatoes, chicken broth, salt, pepper, oregano, thyme, and fresh basil.

    Bring the soup to a gentle boil, then reduce heat and simmer for 15 to 20 minutes.

    Stir in the blended cottage cheese until fully incorporated and creamy.

    Taste and adjust seasoning if needed.

    Serve warm, topped with extra basil and a drizzle of heavy cream if desired.
