I used a mini waffle maker by Dash in this recipe, and it made me 4 mini pumpkin waffles. The macros below are for a serving of 2 mini waffles.
You can store your leftover chaffles in an airtight container in the refrigerator for up to 4 days. To reheat, place them in the microwave for about 30 seconds or so!

Warm up your waffle maker while you prepare your batter. I used a Dash mini waffle maker
In a small bowl, mix together all of the ingredients until fully incorporated.
Pour 1/4 of your batter into your waffle maker. Cook until your waffle maker goes off. Repeat for the remaining 3 waffles.
Serve with sugar free maple syrup and enjoy!
