Yes! You can either completely prepare & cook it the night before or just prepare the egg mixture and pop it into the oven in the morning! I think this quiche tastes just as good reheated as freshly baked! It you want that crispy cheese topping, I would recommend reheating it in the oven at 325 for about 20 minutes or so rather than the microwave.

Preheat oven to 375° F. Spray a standard-sized pie dish with non-stick spray and set aside.
In a large bowl, whisk together the eggs, heavy whipping cream, salt, and pepper.
Add in your broccoli, bell peppers, and green onions. Stir until fully incorporated.
Pour mixture into your pie dish. Top your quiche off with the shredded cheese.
Bake for 35-40 minutes and enjoy!!
