What You Will Need

  • Eggs – You will need 6 large eggs.
  • Heavy Whipping Cream – 1 cup of heavy whipping cream.
  • Ham– 1/2 cup cubed ham. Try to look for a low sodium, uncured ham with no preservatives and nitrates.
  • Shredded Cheese – Feel free to use any flavor you would like! I used 1/4 cup of shredded fiesta style cheese.
  • Mini Bell Peppers – 3 mini bell peppers, thinly sliced.
  • Broccoli – 1 cup chopped broccoli
  • Green Onions – 1 bunch of chopped green onions, whites only.
  • Salt & Pepper – To taste.

How To Store Them

Store your quiche slices in an air tight container in the fridge for up to 5 days. To reheat it, pop a slice in the microwave for about 30-45 seconds.

Optional Substitutions/Add Ins

I love these egg bites so much because they are so customizable! You can make all of them different flavors if you want even!

  • Ham – Use any meat of choice! Prosciutto is excellent!
  • Other Veggies – Such as tomatoes, broccoli, and onion.
  • Cheese – I mentioned this above, but you can use any flavor of cheese you want. Cottage cheese is even really good.
  • Turkey Sausage – Add some turkey sausage crumbles in your egg bites for added protein!

Can I Prepare This Ahead of Time?

Yes! You can either completely prepare & cook it the night before or just prepare the egg mixture and pop it into the oven in the morning! I think this quiche tastes just as good reheated as freshly baked! It you want that crispy cheese topping, I would recommend reheating it in the oven at 325 for about 20 minutes or so rather than the microwave.
