This Lemon Chicken Orzo Soup is arguably my favorite soup. Like ever. I know that is putting standards pretty high, but everyone who has tried this has said the same thing. And on top of that, it is so incredibly nourishing, cozy, and full of clean ingredients. Any time I'm chilly or sick this is the first soup that comes to mind. The lemon is so refreshing, it's not too thick or thin, it's just...perfect. I also LOVE this Crock Pot Chicken & Gnocchi Soup and this Crock Pot Chicken & Wild Rice Soup around this time of the year!
You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for a minute or so!

Heat up the oil in a large pot over medium/high heat (I use my Dutch oven). Add in your green onions, celery, & carrots. Cook until vegetables are soft, 5-8 minutes.
Stir in the garlic, thyme and lemon zest. Season with salt and pepper to taste.
Add in your chicken broth. Bring to a boil & add orzo. Cook for 10 minutes If you are using raw chicken, add it in with the broth. Allow chicken to cook for 15 minutes, shred it, and return back to pot.
Test for seasoning. Stir in the cooked chicken, spinach and dill. Simmer on medium/low heat until spinach is wilted.
Next, mix in the juice of one lemon. Top with fresh lemon slices and rosemary. Simmer for another 5 min on low heat and enjoy!
