These Low Carb Chimichurri Steak Quesadillas are to die for. I use low carb tortillas to keep these macro friendly and my homemade Avocado Chimichurri Sauce. I just added onions and cheese in mine, but you can get so creative and add whatver you would like! After you make this chimichurri, your life will be changed let me tell you. I put this sauce in quesadillas, breakfast tacos, as a steak sauce, and so more! I love chimichurri sauce as it is, but when you add that avocado, it makes your sauce SO much creamier. This homemade chimichurri sauce is so vibrant, fresh, and full of fresh ingredients. It only takes 5 minutes to make and requires 7 simple ingredients plus some seasonings. This is also way better than buying chimichurri from the store because you are avoiding all of those additives, gums, thickeners, preservatives, etc.! Ingredients
Carb Counter Tortillas - 2 carb counter tortillas (10 inch - I used La Banderita)
Steak - 4 ounces of grilled flank steak, sliced & marinated in lime & orange juice for at least 30 min - I used the precooked sirloin steak from my Trifecta meal prep plan!
Monterey Jack Cheese - 3/4 cup Monterey jack cheese, shredded.
Heat a pan over medium heat with oil, butter, or whichever you prefer (I like avocado oil mixed with Irish butter).
Place one tortilla on the pan and sprinkle half of the cheese on the tortilla, followed by the steak, avocado chimichurri, onion, remaining cheese and other tortilla.
Cook until the quesadilla is golden brown on both sides and the cheese is melted, about 2-4 minutes per side. Enjoy!
What Kind of Steak Do You Use?
I use grass-fed sirloin steak in this recipe. I buy this pre-cooked already through my favorite meal prep company, Trifecta. You can get all sorts of pre-cooked protein ad side dishes from them and it speeds up your time in the kitchen SIGNIFICANTLY!! You can also buy complete meals if you don't have time to cook at all. 2 tortillas (I use the La Banderita brand carb counter tortillas.)
4oz sirloin steak (I use Trifecta pre-cooked grass fed sirloin)
1/4cup avocado chimichurri sauce (Recipe for this is on my website linked above!)
red onion (slices to taste)
3/4cup Monterey jack cheese (shredded)
lime & orange juice (optional, but I love soaking my steak in a little bit of lime juice before hand!)
