- 1 zucchini (shredded & moisture squeezed out)
- 3 tsp garlic (minced)
- 2 tbsp dill (fresh, finely chopped)
- 1 tbsp mint (fresh, finely chopped)
- 1 egg (large, organic)
- 1 cup almond flour (organic, fine)
- 1 tsp garlic salt
- 1/2 tsp pepper
- Zest of 2 lemons
- Juice of 1 lemon

How To Make Them
- In a large mixing bowl, combine all of the meatball ingredients and mix until well incorporated.
- Preheat your air fryer to 400°F. Shape the mixture into 22 large meatballs, approximately 1 1/2 inches in size. Place the meatballs in the air fryer basket, lining it with foil and spraying both the foil and meatballs with a light coat of nonstick spray.
- Air fry for 15 minutes, or until golden and cooked through. Serve with your favorite Mediterranean sides and enjoy!

How Do You Make Your Mediterranean Veggies?
This recipe is so so simple but I think these pair with these meatballs so well!
Ingredients:
- 3 Roma tomatoes, diced
- 3/4 large cucumber, thinly sliced (so thin that it looks almost shaved)
- 1/2 large red onion
- 1 tbsp Olive oil
- 2 tbsp red wine vinegar
- Salt & pepper to taste
Instructions:
Simply combine everything in a small mixing bowl and cover in the fridge for a couple of hours. I like to make the veggies a few hours before making the meatballs to allow for the flavors to marinate for a little bit.

How Do You Make Your Couscous?
I cook my couscous according to the package directions, but instead of water I just cook it in some Kettle & Fire Organic Chicken Bone Broth and a pinch of salt! Not only does this add SO much more flavor, but it also adds protein and so many nutrients!
How To Store
You can store leftovers in an airtight container in the fridge for up to 4 days. You can microwave them for a minute, or place them in the oven to reheat them at a low temperature (275 or so for 10 ish minutes).
