Sweet Potato & Black Bean Chicken Quesadillas

Quesadillas are just one of those foods that everyone loves and never gets old. These Sweet Potato & Black Bean Chicken Quesadillas are a delicious appetizer or great busy weekday meal!

They can easily be made vegetarian friendly if you omit the chicken and use a cheese substitution! They have the perfect sweet/savory combination and are so hearty! I love how meaty the beans and sweet potatoes make this dish feel and they keep me full for so long. All the ingredients can easily be prepped in advance too.

Ingredients

  • Tortillas - I like the almond flour tortillas by Siete or my homemade Sourdough Discard Tortillas
  • Cooked & shredded chicken
  • Cooked & mashed sweet potatoes
  • Black beans
  • Spinach
  • Monterey Jack Cheese
  • Taco seasoning

How To Make Them

  1. Place one tortilla on your working surface. Add a spoonful of mash sweet potato and spread it around the tortilla.
  2. Add a spoonful or two of black beans & spread among the tortilla. Repeat with the spinach & chicken.
  3. Season with taco seasoning to taste. Sprinkle the shredded cheese evenly and then top with another tortilla.
  4. Cook in a buttered skillet over medium heat for 3-4 minutes on each side. Enjoy!

How To Store Leftovers

I prefer to keep all of the ingredients for these separately stored in my fridge and actually assemble the quesadillas as I want them. Then, you can enjoy a perfectly fresh, crispy quesadilla every time! If you decide o cook them all at once though, I recommend heating them up in the air fryer or oven so that they stay crispy.

  • tortillas (of choice)
  • sweet potatoes (cooked & mashed)
  • black beans (rinsed and drianed)
  • Monterey jack cheese (shredded. Or cheese or choice)
  • spinach (a handful per quesadilla)
  • chicken (shredded & cooked)
  • taco seasoning (to taste. I like Siete)
Instructions
