Quesadillas are just one of those foods that everyone loves and never gets old. These Sweet Potato & Black Bean Chicken Quesadillas are a delicious appetizer or great busy weekday meal!
They can easily be made vegetarian friendly if you omit the chicken and use a cheese substitution! They have the perfect sweet/savory combination and are so hearty! I love how meaty the beans and sweet potatoes make this dish feel and they keep me full for so long. All the ingredients can easily be prepped in advance too.

I prefer to keep all of the ingredients for these separately stored in my fridge and actually assemble the quesadillas as I want them. Then, you can enjoy a perfectly fresh, crispy quesadilla every time! If you decide o cook them all at once though, I recommend heating them up in the air fryer or oven so that they stay crispy.

Place one tortilla on your working surface. Add a spoonful of mash sweet potato and spread it around the tortilla.
Add a spoonful or two of black beans & spread among the tortilla. Repeat with the spinach & chicken.
Season with taco seasoning to taste. Sprinkle the shredded cheese evenly and then top with another tortilla.
Cook in a buttered skillet over medium heat for 3-4 minutes on each side. Enjoy!
