These Zucchini & Feta Turkey Burgers are made with with freshly grated zucchini, crumbled feta cheese and the perfect blend of Mediterranean seasonings. I topped these off with my healthy homemade tzatziki sauce and a low carb burger bun. My Spinach & Feta Turkey Burgers are arguably one of my most popular recipes of all time, but I think I outdid myself with this version! Ingredients
Ground Turkey - I used 2 pounds of the Butterball 85% lean ground turkey for this recipe! I usually use a leaner ground turkey for my other recipes, but I find 85% works best to hold the burgers together.
Zucchini - One medium zucchini, grated and liquid squeezed out (mine weighed 4 oz. after squeezing).
Worcestershire Sauce - 1 tablespoon.
Feta Cheese - 4 ox. of crumbled feta cheese.
Shallot - 1 small shallot, finely diced.
Mined Garlic - 2 teaspoons of minced garlic.
Egg - One large egg.
Almond Flour - 1/3 cup of almond flour.
Garlic Salt - 1 tsp. garlic salt.
Pepper - 1 tsp. pepper
Parsley - 2 tsp. parsley.
Greek Seasoning - 1 tsp. Greek seasoning.
Equipment you will need:
Grill/Grilling Pan - I am not the biggest griller, and when I say that I mean with an actual outdoor grill. Also, if there's bad weather being outside grilling stinks! As an alternative to using an outdoor grill, I use an Anolon 11 inch nonstick grilling pan. I get asked almost on a daily basis what kind of pan this is! You can find a link to the pan here. It is truly nonstick, easy to clean up, durable, and gives the perfect sear. I also love how it has a pour spout to easily dump out extra juices and grease. It's also extremely affordable so you get the best of both worlds with this pan.
My Tzatziki Sauce
If you want to make my homemade tzatziki sauce (game changer) just blend together the following ingredients. I like using my Nutribullet for this.
Greek Yogurt - I use plain non-fat Greek yogurt.
Grated Cucumber - I used about 1/4 of a medium cucumber but add more or less to your liking!
Dill - I used dried dill, but definitely use fresh if you have that on hand!
Minced Garlic - Measure with your heart, but I used roughly 1 tsp.
Lemon Juice - Just a squeeze to give it a little bit of a tang.
Lemon Zest - To bring out the lemon flavor even more without making the tzatziki sauce too runny.
Olive Oil - For flavor and creaminess.
Salt & Pepper - To taste.
How To Make Them
In a large mixing bowl, combine all of the ingredients until fully incorporated.
Form 9 patties and line on a large baking sheet. Place in freezer for ten minutes to firm up. This helps significantly and ensures they won't break on you!
Preheat your grill/grilling pan. Cook for about 5-6 minutes on each side. Try not to flip back and forth or the burgers are more likely to break apart.
Serve on toasted buns with toppings of choice. I did my tzatziki sauce, arugula, red onion, & tomato.
Tips For Cooking
Don't skip the step of placing them in the freezer! This prevents them from breaking apart on the grill. Turkey burger patties are more delicate than beef haha.
Do not move/flip the burgers around constantly. If you are consistently flipping the burgers back and forth on the grill they are more likely to break apart and they won't get those perfect pretty grill marks. Wait 5-6 minutes until flipping your patties to the other sides and keep them on the grill until fully cooked.
Take away the uncertainty of judging the doneness of your burger by using a thermometer. When the burgers reach 165°F, you know that they are fully cooked to perfection. If you cook them any longer they won't be as juicy!
