These Air Fryer Cheesy Zucchini Tots are my favorite Summer appetizer!! They are low calorie, gluten free, high protein, and SO yummy! This requires very minimal, basic ingredients as well. The air fryer gives them the perfect texture. Another great Summer appetizer that I LOVE are my Goat Cheese Stuffed Mini Bell Peppers.
You can store your leftovers in an airtight container in the refrigerator for up to 5 days. I like to reheat mine in the oven or air fryer to remain that crispy outer edge!

Combine all ingredients in a medium mixing bowl.
Use an oval shaped tablespoon to form 25 evenly sized tots.
Air fry at 400°F 15-20 minutes, flipping half way through.
