This could be your new favorite snack or appetizer! These Goat Cheese Stuffed Mini Bell Peppers are a quick, minimal ingredient snack or appetizer! They are great for any get together, especially barbeques! I love topping these off with some honey, balsamic fig glaze, and rosemary! You can customize them to your liking with any of your favorite spices and toppings. These are also gluten free, vegetarian friendly, and low carb, so they meet many different diets. Ingredients

For the Peppers:

  • Mini Bell Peppers – 10 mini bell peppers, cut in half with seeds & membranes removed.
  • Goat Cheese – 4 oz. goat cheese (log, not crumbles so you can spread it)

Topping:

  • Honey – 2 tsp. honey.
  • Balsamic Glaze– 1 tsp of a balsamic glaze of choice. I used a balsamic fig glaze.
  • Rosemary – Fresh rosemary, to taste

How To Make Them

  1. Preheat your oven to 400°F. Spread the goat cheese evenly into each pepper half.
  2. Line the peppers along a large baking sheet lined with parchment paper or foil.
  3. Roast the peppers for 20-25 minutes, or until the peppers are lightly charred and soft.
  4. Transfer to a serving platter. Drizzle with balsamic fig glaze and honey. Finish with a sprinkle of fresh Rosemary. Serve warm + enjoy!
