This Blueberry Apple Walnut Salad is probably the most simple & delicious salad I have ever had. I discovered this salad in Rome, Italy out of all places! I was at the little restaurant where fettuccini alfredo was invented and ordered this salad as a starter. The flavor combination seemed to interesting to me so I had to try it. I was pushing myself out of my comfort zone my entire time travelling in Europe so that I would be exposed to new dishes. Little did I know, this salad would be one of my favorite dishes of all time. It is that good.
You don't need any crazy ingredients and the dressing is just oil & balsamic vinegar! And what is really great about this salad is that anyone who has it can customize it to their liking with the amount & ratio of oil & vinegar. Sometimes those simple recipes are the best ones. I am not including any exact measurements or macros on this recipe because it can vary so much depending on how much cheese, nuts, dressing, etc. that you add. That’s the beauty of this recipe though, it’s so incredibly customizable!
Combine the arugula with diced apples, blueberries, and chopped walnuts. Top with freshly grated parmesan cheese. Top each individual salad off with a mixture of olive oil & vinegar for the dressing.
You can store your leftovers in an airtight container in the refrigerator for up to 5 days. It holds very well since there is no dressing mixed into it.
