Ingredients

For the Salad:

  • 6 cups cubed watermelon
  • 1 large cucumber, cut into quarters
  • 1/2 cup thinly sliced red onion
  • 8 oz. crumbled feta cheese

Dressing:

  • Juice of 1 lime
  • 1 tbsp. honey
  • 2 tbsp. red wine vinegar
  • 2 tbsp. olive oil
  • Sea salt, to taste
  • Fresh mint, to taste

Optional for the Spicy Version:

  • Sliced jalapeños
  • Tajin seasoning

How To Make It

  1. Combine all ingredients in a large bowl (add the feta last so that doesn’t get too mushed up).
  2. Divide into 8 servings & enjoy!
