Raspberry and dark chocolate is one of my favorite combinations. I think that these chia bites are such a great alternative to candy. They are super low calorie and have no added sugar. 120g sugar free dark chocolate chips - Lily's or Hu Chocolate are my recommended healthier options.

How To Make Them
Mash the raspberries with a fork. Mix in the chia seeds. Allow to sit for a few minutes for chia seeds to absorb moisture.
Divide mixture among 9 circles on a piece of parchment paper. Freeze for 30-45 minutes.
Melt the coconut oil & chocolate chips in the microwave. Dip each raspberry cluster in the chocolate & top with sea salt if desired. Place in fridge for 10 min to firm up. Enjoy!
How To Store Them
Store your leftover key lime pie bars in an air tight container in the freezer. Allow them to thaw for 15 minutes or so before you eat them again to get the perfect texture!

For the Crust
2cup raspberries (fresh)
1tbsp chia seeds (I get the brand Prozis - Code KATIE10 for 10% off.)
For the Coating
1/2tsp coconut oil
