You can store your leftover Greek Cucumber Salad in an air tight container in the fridge for up to 5 days. When you are ready to enjoy your leftovers, give your pasta salad a good mix because the dressing sinks to the bottom!

Whisk all of the marinade ingredients together in a medium bowl. Add the red onion slices to the marinade. Refrigerate for at least 3 hours or overnight is best.
Combine all of the ingredients for the salad in a large bowl. Add the onions and 1/4 of the leftover marinade. Mix thoroughly.
Serve and enjoy!!
