Greek Cucumber Salad

This healthy Greek Cucumber Salad is a delicious and refreshing side dish packed with fresh ingredients. It is so juicy, tangy, and crunchy! What’s not to love about this 15 minute scrumptious salad?! Try serving this cucumber salad with my Spinach & Feta Turkey Burgers or my Lemon Baked Chicken & Veggies W/ Seared Feta for the perfect meal.

Ingredients

For the Salad

  • Olive Oil – 1/2 cup extra virgin olive oil
  • Cucumber – 2 medium cucumbers, diced.
  • Tomato – 1 large beefsteak tomato, diced
  • Basil – 7-8 fresh basil leaves, cut into thin ribbons
  • Feta – I used 4 ounces of crumbled feta cheese

For the Marinade

  • White Wine Vinegar – 1 cup of white wine vinegar. This is the key to getting pickled onions!
  • Water – 1 cup of fresh cold water.
  • Swerve – You can use any zero calorie sweetener of choice. 1 tablespoon to sweeten the red onions. I personally love Swerve because it is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely safe and natural, with no artificial ingredients, preservatives or flavors. You can purchase Brown Swerve off of Amazon here.
  • Red Onion – You will need 1/2 of a large onion, sliced thinly.
  • Greek Seasoning – 1 tablespoon of Greek seasoning. I used Cavender’s All Purpose Greek Seasoning.
  • Pepper – 1/2 teaspoon black pepper, or to taste.

How To Make It

  1. Whisk all of the marinade ingredients together in a medium bowl. Add the red onion slices to the marinade. Refrigerate for at least 3 hours or overnight is best.
  2. Combine all of the ingredients for the salad in a large bowl. Add the onions and 1/4 of the leftover marinade. Mix thoroughly.
  3. Serve and enjoy!!

How To Store Leftovers

You can store your leftover Greek Cucumber Salad in an air tight container in the fridge for up to 5 days. When you are ready to enjoy your leftovers, give your pasta salad a good mix because the dressing sinks to the bottom!

Optional Add Ins

  • Olives – Sliced Black Olives
  • Seasonings – Oregano, garlic powder, parsley are other great seasonings to add!
  • Lemon Juice – Add some lemon juice to your salad for a citrus tang!
