Preheat your oven to 350°F. Grease a bread pan or line a bread pan with parchment paper.
In a large bowl, whisk together all the dry ingredients. Add in the wet and stir until just combined.
Fold in the grated zucchini & any add ins you would like (optional).
Pour batter into your loaf pan. Bake for 40-50 minutes, or until a toothpick comes out clean.
