They are gluten free and can be made dairy free with your favorite dairy free cheeses.
Ingredients
1cup tapioca flour (organic)
1/2cup almond milk (unsweetened)
1/4cup olive oil (organic, extra virgin)
1 egg (large, organic)
1tsp salt (plus any desired seasonings)
1/4cup mozzarella cheese (freshly grated)
1/4cup cheddar cheese (freshly grated)
Instructions
MIX YOUR DOUGH
Preheat the oven to 400 F. Grease a mini muffin pan. I have this silicone one.
Blend the tapioca flour, almond milk, olive oil, salt and egg until you have a smooth batter.
Stir in the cheese with a rubber spatula.
Fill each muffin hole a little more than halfway with the batter. These will puff up a lot!
Bake in the preheated oven for 15 to 20 minutes. Serve warm :)
