  3. Stir in the Cheese: Using a rubber spatula, gently stir in the freshly grated mozzarella and cheddar cheese until they are evenly distributed throughout the batter.
  4. Fill the Muffin Pan: Carefully spoon the batter into the mini muffin pan, filling each muffin hole a little more than halfway. These cheese bites will puff up quite a bit while baking, so leave a little room at the top.
  5. Bake: Place the muffin pan in the preheated oven and bake for 15 to 20 minutes, or until the cheese bites are golden brown on top and puffed up.
