These Oatmeal Date Squares are an awesome healthy sweet treat that your entire family will love. They consist of an oatmeal crumble that is sandwiched together by a gooey vanilla date caramel-like filling. You only need a few simple, wholesome ingredients. They are gluten free, refined sugar free, vegan friendly, and have a dairy-free option as well. You will not regret making these!! Ingredients
For the Filling:
- 150g organic pitted medjool dates
- 1 cup hot water
- 1/2 tsp organic vanilla extract
For the Crumble:
- 3/4 cup organic oat flour
- 1/2 cup organic rolled oats
- 1/8-1/4 cup organic coconut sugar (depending on your sweetness desire). You can also use monk fruit.
- 1/4 cup organic coconut oil or grass fed butter - Use coconut oil if dairy free.
- 1 tsp cinnamon
- 1/4 tsp baking soda
- 1/4 tsp fine sea salt

How To Make Them
- Preheat oven to 350°F. Line a 9x5 loaf pan with parchment paper.
- Add the dates, vanilla and hot water to your food processor. Sit for 10 minutes, to allow the dates to soften.
- Pulse the date mixture in your food processor until smooth.
- Combine all the ingredients together for the oatmeal crumble in a small mixing bowl.
- Press down half of the crumble mixture into the bottom of your loaf pan. Spread the date filling on top. Top with the remaining crumble.
- Bake for 35 minutes. Allow to cool completely before cutting. Best served cold. Makes 8 large bars or 10 small.
How To Store Leftovers
Store leftovers covered in an air tight container in the fridge for up to 1 week. They are best served cool.
