Healthy Gooey Oatmeal Date Squares

These Oatmeal Date Squares are an awesome healthy sweet treat that your entire family will love. They consist of an oatmeal crumble that is sandwiched together by a gooey vanilla date caramel-like filling. You only need a few simple, wholesome ingredients. They are gluten free, refined sugar free, vegan friendly, and have a dairy-free option as well. You will not regret making these!! Ingredients

For the Filling:

  • 150g organic pitted medjool dates
  • 1 cup hot water
  • 1/2 tsp organic vanilla extract

For the Crumble:

  • 3/4 cup organic oat flour
  • 1/2 cup organic rolled oats
  • 1/8-1/4 cup organic coconut sugar (depending on your sweetness desire). You can also use monk fruit.
  • 1/4 cup organic coconut oil or grass fed butter – Use coconut oil if dairy free.
  • 1 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp fine sea salt

How To Make Them

  1. Preheat oven to 350°F. Line a 9×5 loaf pan with parchment paper.
  2. Add the dates, vanilla and hot water to your food processor. Sit for 10 minutes, to allow the dates to soften.
  3. Pulse the date mixture in your food processor until smooth.
  4. Combine all the ingredients together for the oatmeal crumble in a small mixing bowl.
  5. Press down half of the crumble mixture into the bottom of your loaf pan. Spread the date filling on top. Top with the remaining crumble.
  6. Bake for 35 minutes. Allow to cool completely before cutting. Best served cold. Makes 8 large bars or 10 small.

How To Store Leftovers

Store leftovers covered in an air tight container in the fridge for up to 1 week. They are best served cool.
