No Bake Key Lime Pie Bars (Dairy Free, Gluten Free, No Added Sugar)
These healthy No Bake Key Lime Bars are such a great Summer sweet to keep you cool & feeling refreshed. They have no added sugar and are dairy & gluten free. No one will believe you when you tell them that these are healthy let me tell you! They are so quick & easy and require very basic, minimal ingredients. In a large, strong food processor, pulse the crust ingredients together until you have fine crumbles that stick together. Press down firmly into a silicone 9x9 dish.
Add all the filling ingredients to the same food processor and blend on high until smooth and creamy. Pour over your crust. Cover, and place in freezer for at least 3 hours.
Cut into 16 squares, allow to sit out for 10 min or so before enjoying!
How To Store Them
Store your leftover key lime pie bars in an air tight container in the freezer. Allow them to thaw for 15 minutes or so before you eat them again to get the perfect texture!

Ingredients
For the Crust
3/4cup oats (rolled, old fashioned)
1/2cup pecans
10 dates (pitted medjool)
1tbsp coconut oil (I use Prozis - Code KATIE10 for 10% off.)
sea salt (to taste)
For the Filling
1 1/2cup cashews (I get mine at Prozis - Code KATIE10 for 10% off.)
3 limes (juice & zest)
2tbsp maple syrup (sugar free - I use the brand Lakanto because it is sweetened with monk fruit)
1/2tbsp coconut oil (I get mine at Prozis - Code KATIE10 for 10% off.)
1tsp vanilla extract
2-3tbsp water (until you get a creamy consistency)
