If you’re a fan of bold flavors and Mediterranean flair, then you’re in for a treat with this Sundried Tomato and Feta Grilled Cheese Sandwich recipe. You only need 10 simple ingredients to make these grilled cheese sandwiches. You can make them gluten free with gluten free bread if needed. These sandwiches are made with simple, wholesome ingredients and just taste so fresh.

This recipe makes 2 very large sandwiches when using large pieces of sourdough like I did. 1/2 a sandwich is plenty for me for one serving!

Ingredients

  • 4 slices of bread (I used my homemade organic sourdough)
  • 1/2 cup shredded white cheddar cheese
  • 2 oz. crumbled feta cheese
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 lb. shredded chicken (I used precooked & shredded chicken from trifecta)
  • Basil & red pepper flakes, to taste
  • 1/2 cup greens (like an arugula/spinach mix)
  • Honey (optional, for drizzling)
  • 1 tbsp butter/oil to grease pan/skillet with

How To Make It

  1. Preheat a large skillet with oil or butter over medium heat.
  2. Add two slices of bread side by side to the skillet.
  3. On one of the slices of bread, layer on the sun-dried tomatoes, cheddar, feta, chicken, seasonings, greens, and additional cheese.
  4. Place the other slice of bread on top with the grilled side facing up and gently press down to bind the sandwich together.
  5. Flip the sandwich over so the other half with the cheese can melt.
  6. Drizzle the slice of bread facing up with some honey. Dig in and enjoy!
