What Makes These Cottage Cheese Pancakes Healthier?
One of my favorite things about this recipe is that it’s made with real, nourishing ingredients that leave you feeling satisfied instead of weighed down. Every ingredient serves a purpose, making these pancakes both delicious and filling.
Cottage cheese is the star of the recipe because it naturally boosts the protein while creating an incredibly soft texture. Even if you aren’t usually a cottage cheese fan, don’t worry—you really can’t taste it once the pancakes are cooked.
Instead of regular flour, I use almond flour to keep these pancakes gluten free while adding healthy fats and even more protein. Eggs help bind everything together, while vanilla adds just the right amount of flavor without needing refined sugar.
Ingredients
- Cottage Cheese – 1 cup of small curd cottage cheese. I like 4%
- Eggs – 3 large eggs.
- Almond Flour– 1 cup of almond flour.
- Vanilla Extract – 1 teaspoon of vanilla extract.
- Salt – Just a pinch!
- Baking Powder– 1 teaspoon, to make them fluff.
- Sweetener– This is optional, but I added a tbso of a monk fruit to sweeten them up a little bit, but you don’t really need it if you are serving with maple syrup!

How To Make Them
- Preheat a large griddle/skillet over medium heat.
- In a small blender such as a Nutribullet, combine all of the ingredients & blend until there are no chunks and the batter is very creamy.
- Melt a little but of butter or spray nonstick spray on your griddle/skillet. Pour your pancake batter evenly among 6 pancakes.
- Cook for about 3 minutes on each side, or until golden and cooked through.
- Top with sugar free syrup and enjoy!

One of the best things about these gluten-free cottage cheese pancakes is how versatile they are. I love changing up the toppings depending on the season or whatever I have in the refrigerator.

How To Store Leftovers
You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for 30 seconds or so.

Yes! These pancakes freeze really well. Once they’ve cooled completely, place them on a baking sheet until frozen, then transfer them to a freezer-safe bag or container. They’ll keep for up to three months.
When you’re ready to enjoy them, simply warm them in the toaster, microwave, air fryer, or a skillet until heated through.
