Ingredients

For The Meat

  • Ground Turkey– I used 2 pounds of 93% lean ground turkey. My favorite brand is Butterball. You can also use ground beef, chicken, whatever you would like!
  • Chili Powder – 1 tablespoon of chili powder.
  • Cumin – 1 teaspoon of ground cumin.
  • Garlic Salt– 1/2 teaspoon of garlic salt.
  • Pepper – 1/2 teaspoon black ground pepper.
  • Garlic– 1 teaspoon of minced garlic.
  • Yellow Onion – 1/2 medium yellow onion, diced.

For The Rest

  • Sweet Potatoes– 4 cups (or 2 pounds) of diced sweet potatoes, skin removed. The smaller you dice them, the faster they will cook!
  • Chili Powder – 4 teaspoons of chili powder.
  • Cumin – 2 teaspoons of ground cumin.
  • Garlic Salt– 1/2 teaspoon of garlic salt.
  • Pepper – 1/2 teaspoon of black ground pepper.
  • Green Chilies – 7 oz. can of diced green chilies.
  • Fire Roasted Tomatoes – 14.5 oz. can of your favorite fire roasted tomatoes.
  • Water – 1/4 cup of water, to water down the sauce a bit.
  • Cheddar Cheese – 1/2 cup of shredded cheddar cheese.
  • Cilantro – To taste. I love cilantro so I may be biased but this really tops off the dish!

How To Make It

  1. Prep your ingredients. Dice the sweet potatoes (the smaller the dice, the faster they’ll cook) and chop the onion.
  2. Heat the pan. In a large deep skillet or wok (I like to use my HexClad wok), heat olive oil over medium-high heat.
  3. Cook the sweet potatoes. Add the diced sweet potatoes, cover with a lid, and cook until they begin to soften, stirring every few minutes.
  4. Brown the turkey. In a separate large skillet, add 2 pounds of ground turkey, ½ of a diced yellow onion, and 1 teaspoon of minced garlic. Cook over medium heat until the turkey is browned and cooked through.
  5. Season the turkey. Add 1 tablespoon chili powder, 1 teaspoon cumin, ½ teaspoon garlic salt, and ½ teaspoon black pepper. Stir well, reduce the heat to low, and let the flavors blend.
  6. Add ingredients to the sweet potatoes. To the sweet potatoes, add 4 teaspoons chili powder, 2 teaspoons cumin, ½ teaspoon garlic salt, ½ teaspoon black pepper, the 7 oz can of diced green chilies, the 14.5 oz can of fire-roasted tomatoes, and ¼ cup of water. Stir well to combine.
  7. Cook until tender. Cover and cook for about 10 minutes, or until the sweet potatoes are tender and can be easily pierced with a fork.
  8. Combine everything. Add the cooked turkey mixture to the sweet potato mixture. Stir until everything is evenly combined.
  9. Melt the cheese. Sprinkle ½ cup shredded cheddar cheese over the top, cover, and let it melt for about 5 minutes.
  10. Serve and garnish. Serve warm and top with fresh cilantro, avocado slices, and lime wedges if desired.

How To Store Leftovers

You can store your leftovers in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so. This dish reheats so well. It is perfect for meal prepping!
