Satisfy your strawberry cake craving with these low calorie, Strawberry Protein Cake Bars! These are super light & fluffy and are topped with a strawberry cream cheese frosting. There is no added sugar and each slice is only 114 calories with 9 grams of protein!

This is a great recipe for when you need to use up those strawberries that are about to go bad! This recipe required very simple ingredients that you most likely have at home already and only take 10 minutes to prepare.

What You Will Need

For the Cake

  • One 11×7 Inch Glass Baking Dish – To bake your banana bars in.
  • Flour – 1 3/4 cups of all-purpose or oat flour work best. You can use any kind though! Macros below assume all-purpose.
  • Vanilla Protein Powder – 30 grams for some vanilla flavor and protein! My personal favorite is by the brand Prozis (either the zero diet whey vanilla or the natural vanilla whey isolate). You can actually use the code “KATIE10″ for 10% off at Prozis!
  • Strawberries – 1 cup of pureed strawberries, which is roughly 12 large strawberries.
  • Granulated Sugar Substitute– I used 1/2 cup of Swerve, which is my go-to when it comes to sugar alternatives. Swerve is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely save and natural, with no artificial ingredients, preservatives or flavors. It is safe for diabetics and Keto approved. You can purchase Swerve off of Amazon here.
  • Salt – 1/2 teaspoon, for flavor.
  • Baking Soda – 1 teaspoon, to make the cake rise
  • Cinnamon & nutmeg – 1 teaspoon of cinnamon & 1/2 teaspoon of nutmeg, for flavor
  • Eggs– This is what helps makes the cake super fluffy and contributes to the protein content. You will need 2 large eggs.
  • Vanilla Extract – 1 teaspoon, for flavor.
  • Greek Yogurt – I used 1 cup of plain non-fat Greek yogurt. This is the key ingredient to getting the most moist & fluffy cake! It also adds more protein to the strawberry bars!

For the Frosting

How To Make It

  1. Preheat your oven to 350°F. Spray an 11×7 inch baking dish with nonstick spray.
  2. In a large mixing bowl, whisk your flour, protein powder, salt, and baking soda.
  3. Add in your eggs, Greek yogurt, puréed strawberries, and vanilla extract. Mix well until there are no more lumps.
  4. Pour your cake batter into your prepared baking dish. Bake for 35 minutes, or until a toothpick comes out clean.
  5. While the cake is baking, make your frosting by blending the cream cheese, protein powder, and sugar free strawberry jell mix with a handheld mixer. Set aside in the fridge until you are ready to frost your cake.
  6. Frost your cake once the strawberry cake has had enough time to cool off so the frosting does not melt.
  7. Top with fresh strawberries if desired and enjoy!

How To Store

Store your Strawberry Protein Cake Bars in an airtight container in the refrigerator for up to 5 days. You can also keep them in the original baking dish and cover that with plastic wrap in your fridge.
