What You Will Need

  • Ripe Avocados – You want your avocados to be ripe, but not too ripe. You want to be able to dice your avocados without them mushing up!
  • Feta Cheese – Crumble your own feta to avoid anti-caking agents.
  • Roma Tomatoes – Diced, as large or small as you prefer.
  • Lemon Juice – For a refreshing flavor and to help keep the avocados from browning.
  • Olive Oil
  • Apple Cider Vinegar – For flavor and to also help preserve the veggies.
  • Red Onion – You can use any onion, but I prefer red.
  • Minced Garlic – Measure with your heart. I used 1 heaping teaspoon.
  • Sea Salt – Just a little bit, to taste.
  • Black Pepper – To taste.
  • Parsley – 1 tsp, or to taste

**I chill all my ingredients in the fridge before putting this dip together.

How To Make It

  1. In a medium mixing bowl, combine the lemon juice, olive oil, apple cider vinegar, garlic, salt, pepper, parsley, diced tomatoes, and red onion.
  2. Gently fold in the diced avocados and crumbled feta, mixing just until combined to avoid mashing the avocados.
  3. Serve with crackers, chips, or fresh vegetables. If the ingredients were not chilled ahead of time, cover and refrigerate for about 30 minutes before serving.

Tips for the Perfect Dip

  • Use Ripe Avocados: For the best texture and flavor, make sure your avocados are ripe. They should give slightly when you press them. Not too ripe though or they will be too mushy to dice!
  • Prevent Browning: If you need to make the dip ahead of time, store it in an airtight container and press a piece of plastic wrap directly on the surface of the dip before sealing the container. The lemon juice also helps in keeping the avocados from turning brown.

How To Store It

Store this dip in an air tight container in the fridge for up to 6 days. To help prevent the avocados from browning, put a piece of plastic wrap on the dip, pressing down onto it and then placing your lid on your container. This will help prevent air getting to the avocados.
