Cranberry Pecan Goat Cheese Truffles

These Cranberry Pecan Goat Cheese Truffles are an awesome appetizer/snack! Each truffle is full of creamy coat cheese, cream cheese, cranberry, chopped pecans, and topped with a sweet honey drizzle. Serve these with small pieces of bread, crackers, or veggies!

These truffles also very macro friendly and full of clean ingredients. There are 87 calories per truffle and 4 grams of protein!

I think that these are such an awesome universal appetizer dish for any kind of gathering. They are super refreshing for those warmer months, but they are also very delicious and can be decorated super cute for holiday gatherings. They are also just a great snack to have in your fridge for when you have the munchies! Be sure to try my Buffalo Chicken Dip as well for another low carb snack!

Ingredients

  • Goat Cheese – 10 ounces of plain goat cheese. Be sure to not buy crumbled goat cheese.
  • Low Fat Cream Cheese – I used 4 ounces of low fat cream cheese for some creaminess and flavor.
  • Dried Cranberries – I get the reduced sugar kind by the brand Ocean Spray. Be sure to chop up the cranberries into smaller pieces.
  • Pecans – Whole pecans chopped up into small pieces. My favorite pecans are by the brand Rancho Pecana. You can order their pecans in bulk online and it’s SO much cheaper than getting them at your local grocery store. They are also the best pecans I’ve ever had hands down.
  • Parsley – Be sure to use fresh parsley, I don’t think dry would be very good! It’s just to garnish with but it does add some flavor too.
  • Honey – This is optional, but I think it really brings out all the flavors when you put a small drizzle of honey over these truffles!

How To Make It

  1. Blend together the cream cheese, goat cheese, and honey with a hand mixer until fully incorporated. My handheld Kitchen Aid mixer is my go-to for this.
  2. Fold in the chopped pecans and dried cranberries with a rubber spatula.
  3. Use a cookie scoop to evenly scoop out 18 truffles. You can also just put it all in a bowl as a large dip, but I like to make individual even servings so I can track my macros.
  4. Garnish with fresh parsley, if desired. Serve with your favorite crackers or veggies and enjoy!

You can store leftovers in an air tight container in the refrigerator for up to a week. These are so good I guarantee you won’t have these for very long though haha!
