Ground Turkey & Sweet Potato Skillet

This One Pan Ground Turkey & Sweet Potato Skillet is the ultimate weeknight dinner. It is easy, tasty, and full of healthy ingredients. It’s loaded with ground turkey, fire roasted tomatoes, sweet potatoes, and topped with cheddar cheese. Since it is a one pan meal, the cleanup is practically nothing!

This recipe makes 6 large servings. It is the perfect meal because you are getting your protein, carbs, and veggies all in one! There are a whopping 34 grams of protein per serving too! You may think this is a weird combo of ingredients, but don’t knock it until you try it! I can’t get enough!

Ingredients

For The Meat

  • Ground Turkey– I used 2 pounds of 93% lean ground turkey. My favorite brand is Butterball.
  • Chili Powder – 1 tablespoon of chili powder.
  • Cumin – 1 teaspoon of ground cumin.
  • Garlic Salt– 1/2 teaspoon of garlic salt.
  • Pepper – 1/2 teaspoon black ground pepper.
  • Garlic– 1 teaspoon of minced garlic.
  • Yellow Onion – 1/2 medium yellow onion, diced.

For The Rest

  • Sweet Potatoes– 4 cups of diced sweet potatoes, skin removed. The smaller you dice them, the faster they will cook!
  • Chili Powder – 4 teaspoons of chili powder.
  • Cumin – 2 teaspoons of ground cumin.
  • Garlic Salt– 1/2 teaspoon of garlic salt.
  • Pepper – 1/2 teaspoon of black ground pepper.
  • Green Chilies – 7 oz. can of diced green chilies.
  • Fire Roasted Tomatoes – 14.5 oz. can of your favorite fire roasted tomatoes.
  • Water – 1/4 cup of water, to water down the sauce a bit.
  • Cheddar Cheese – 1/2 cup of shredded cheddar cheese.
  • Cilantro – To taste. I love cilantro so I may be biased but this really tops off the dish!

How To Make It

  1. In a deep skillet or wok (I prefer a wok – mine is by HexClad), heat up your olive oil over medium/high heat. Add your sweet potatoes, cover, and allow them to cook and soften up. Mix them around every free minutes or so.
  2. In the meantime, brown your ground turkey in a skillet with the onion and garlic. Add in the chili powder, cumin, garlic salt. and pepper. Turn the heat down to low for the flavors to settle in.
  3. Add your fire roasted tomatoes, green chilies, water, and seasonings to your sweet potatoes. Cover again and allow to cook for 10 minutes, or until the sweet potatoes are soft.
  4. Add in your ground turkey and mix thoroughly. Top with shredded cheese, cover, and allow the cheese to melt, about 5 minutes.
  5. Serve and enjoy! I served mine with avocado, cilantro, and lime wedges!

How To Store Leftovers

You can store your leftovers in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so. This dish reheats so well. It is perfect for meal prepping!
