Ingredients

  • Almond Flour – 2 cups of fine almond flour. My favorite is by the brand Prozis. You can use the code KATIE10 for 10% off as well!
  • Maple Syrup – 1/3 cup of sugar free maple syrup, or liquid sweetener of choice. I use the brand Lakanto, which you can find on Amazon. I use this one because there is no artificial sweeteners in it and it is made with monk fruit!
  • Chocolate Chips – 67 grams of Lily’s sugar free dark chocolate chips, or your favorite chocolate chips! These are naturally sweetened with stevia & low carb so that is why I prefer them!
  • Sea Salt – 1/2 teaspoon of sea salt, or 1/4 regular salt if you do not have sea salt.
  • Baking Soda – 1/2 teaspoon.
  • Vanilla – 1/2 teaspoon of vanilla extract.
  • Coconut Oil – 1 tablespoon of melted coconut oil.
  • Greek Yogurt – 2 1/2 tablespoons of plain, nonfat Greek yogurt.

How To Make Them

  1. Preheat your oven to 350F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl, whisk together all of the dry ingredients.
  3. Add the wet ingredients and mix with an electric mixer just until fully incorporated. Fold in the chocolate chips.
  4. Divide the dough into 18 evenly sized cookies 1/2 an inch apart (these don’t spread out too much so you could even put them a little closer).
  5. Bake for 12 minutes. Slightly press down the middle of the cookies when they come out of the oven. Allow to rest on cookie sheet for another 5 minutes and enjoy!

How To Store Leftovers

You can store your leftovers in an airtight container in a cool, dry place for up to 1 week. I like to pop mine in the microwave for a few seconds so they are warm and gooey.
