What You Will Need
Pancakes
- 3/4 cup all-purpose flour

- 1/2 teaspoon cinnamon
- Pinch of nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup unsweetened almond milk (or milk of choice)
- 3/4 cup plain nonfat Greek yogurt
- 1 teaspoon vanilla extract
Streusel
- 1/4 cup flour
- 1/4 cup monk fruit sweetener (or coconut sugar)
- 2 tablespoons butter, softened (or coconut oil)
- 1/2 teaspoon cinnamon
Caramelized Bananas
- 1 tablespoon butter (or coconut oil)
- 2 medium ripe bananas
- 1 tablespoon coconut sugar
- 1 tablespoon maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla bean paste

Instructions
- In a large mixing bowl, whisk together the flour, protein powder, cinnamon, nutmeg, baking powder, and salt.
- Add the egg, almond milk, Greek yogurt, and vanilla. Whisk until smooth and fully combined. The batter should be thick but pourable. If needed, add 1 to 2 tablespoons of milk to loosen it slightly. Set aside.
- In a small bowl, combine the flour, monk fruit, softened butter, and cinnamon for the streusel. Use a fork to mix until small crumbs form. Avoid overmixing. Set aside.
- Slice the bananas into 1/4 to 1/2 inch rounds.
- Heat a medium skillet over medium heat and melt the butter. Add the bananas, coconut sugar, maple syrup, cinnamon, and vanilla bean paste.
- Cook for 2 to 3 minutes, gently turning the bananas to coat them in the sauce. Let them caramelize until golden and glossy. Remove from heat.
- While those are caramelizing, heat a separate skillet or griddle over medium heat and lightly grease.
- Scoop about 1/3 cup of batter per pancake onto the skillet. Cook 2 to 3 at a time to avoid overcrowding. You should get 6 pancakes.
- Cook for 1 to 2 minutes, until bubbles form on the surface and the edges look set.
- Sprinkle a small amount of streusel over each pancake. Let it sit for about 30 seconds, then carefully flip.
- Cook another 1 to 2 minutes, until golden brown and cooked through. Flip once more briefly to soak up any melted streusel if needed.
- Stack the pancakes, spoon the warm caramelized bananas over the top, and drizzle with maple syrup. Serve immediately.
