Chicken & Rice Casserole

This Chicken & Rice Casserole is the perfect weeknight dinner that your whole family will love! It is one of those “dump and bake” type of casseroles! You can make this dish low carb if you would like by using cauliflower rice too! It’s so versatile and customizable. This dish is also only 300 calories per serving and packed with protein.

Ingredients

  • Chicken Breasts – 24 ounces (1.5 lbs.) of boneless, skinless chicken breasts, cooked & shredded. I cooked mine in the crock pot to make it easy with a little bit of salt & pepper. You will add more seasonings later.
  • Cream of Chicken – 1 26 ounce can of 98% fat free cream of chicken.
  • Butter – 2 tablespoons of melted butter for flavor.
  • Rice – 2 1/2 cups of cooked rice of choice – I did half Jasmine rice and half cauliflower rice to help balance out the macros. If you are on a low carb diet, do all cauliflower rice.
  • Green Onions – 1 bunch of green onions (whites only), chopped.
  • Onion Powder – 2 teaspoons, for flavor.
  • Garlic Powder – 1 teaspoon, for flavor.

  • Cayenne Pepper – 1/4 teaspoon.
  • Salt & Pepper – To taste, about 1/2 teaspoon of each.
  • Cheddar Cheese – 3/4 cup of shredded cheddar cheese.

How To Make It

  1. Preheat your oven to 350°F. Spray a large deep 9×13 glass casserole dish with nonstick spray.
  2. Mix all of the ingredients except for the shredded cheese in a large mixing bowl until fully incorporated.
  3. Pour the mixture into your prepared baking dish. Top the dish with the shredded cheddar cheese. You can also top with crumbled of crackers if you want a crunchy topping.
  4. Bake for 20 minutes. Serve and enjoy!!

How To Store Leftovers

You can store your leftover chicken in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so.
