This Cilantro Lime Grilled Chicken is juicy, tender, and marinated in a cilantro citrus sauce. You can marinate this the night before as well, so all you have to do the next day is pop them on the grill! I recommend marinating for at least 2 hours! Ingredients

  • Chicken Breasts – 32 ounces (2 lbs.) of boneless, skinless chicken breasts.
  • Cumin – 1 teaspoon ground cumin, plus more to taste
  • Chili Lime Seasoning – 1 teaspoon of chili lime seasoning, plus more to taste. The kind I used is by the brand Enspice. Trader Joes has a good one too!
  • Dan-O’s Spicy Seasoning –  1/2 to 1 teaspoon, for flavor and a hint of spice to the dish. You can actually use the discount code “KATIE10″ for 10% off at Dan-O’s! I love Dan-O’s seasoning because it is zero calories, low sodium, and has no chemicals or sugar.
  • Garlic Powder – 1 teaspoon, for flavor.
  • Salt & Pepper – To taste
  • Lime Juice – 1/3 cup of freshly squeezed lime juice.
  • Lime Zest – Zest of 2 limes. This is key to getting a strong lime flavor!
  • Orange Juice – I know this is not what you would expect to be in lime flavored chicken but it really brings out the citrus flavor and makes the best marinade! I used 1 cup of freshly squeezed orange juice.
  • Olive Oil – 1/4 cup of extra virgin olive oil for your marinade.
  • Soy Sauce – 2 tablespoons of low sodium soy sauce.
  • Garlic – I used 2 teaspoons of minced garlic but measure with your heart!
  • Chopped Cilantro – You can use as much as you would like. I used 1/4 cup and then topped my dish off with a little bit extra.
  • Optional Toppings – Drizzle of honey, guacamole, additional cilantro & lime juice.

How To Make It

  1. Season your chicken breasts with salt, pepper, chili lime seasoning, Dan-O’s spicy seasoning, and cumin to taste. Place in a large bowl and set aside.
  2. In a medium bowl, combine the 1 tsp cumin, 1 tsp chili lime seasoning, 1 tsp garlic powder, lime juice, orange juice, olive oil, soy sauce, garlic, half the lime zest, and the cilantro. Mix well.
  3. Pour 2/3 of the sauce mixture into your bowl of chicken. Let marinate for at least two hours (best if overnight).
  4. Heat up your grill or skillet on medium/high heat. Cook evenly on both sides until fully cooked, about 12 minutes.
  5. Reduce the heat to low and add in your reserved marinade, the remaining lime zest, drizzle of honey, and extra cilantro if desired. Simmer for 5 minutes.
  6. Serve & enjoy! I served mine with cilantro lime rice and topped mine off with fresh guacamole.

How To Store Leftovers

You can store your leftover chicken in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so.
