The Key To Making These Perfect

Take the time to really whip up your egg whites with your electric mixer to get those stiff peaks! This will make your cookies so light and fluffy, and almost give a meringue like texture!

Ingredients

  • Egg Whites – 9 tablespoons liquid egg whites. I buy mine in the carton to make it easy!!
  • Coconut – 2 cups unsweetened shredded coconut – I used Anthony’s Organic. Make sure it is unsweetened! Do not pack the coconut in your cup, make sure they are LOOSE cups.
  • Sugar Substitute – 1/3 cup granular sugar substitute- I used Swerve.

How To Make Them

  1. Preheat your oven to 325°F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, add your egg whites. Whip the egg whites with a hand mixer until they have stiff peaks. This should take between 3-5 minutes.
  3. Carefully fold in the unsweetened shredded coconut and sweetener to the egg whites. Be careful to not over mix.
  4. Take a standard sized cookie scoop to measure out 15 evenly sized macaroons, shaping them into balls as you go.
  5. Place the macaroons on your baking tray with about 1/2 inch in between each macaroon, they won’t rise or spread out much so don’t worry about leaving big gaps.
  6. Bake for 20-25 minutes until they are golden on the outside.

How To Store Leftovers

You can store your leftovers in an airtight container for up to 5 days in a cool, dry place. You can also put them in the fridge if you want. They are good cold!
