Healthy Baked Pork Taquitos

Who else had those taquitos out of the frozen section as a kid that you just tossed in the oven? I sure did! Let me tell you, after you make your own from scratch you will never buy those again! Homemade taquitos are the ultimate game changer! These were so quick & easy to make (and extremely fresh too might I just add). I used pre-cooked shredded pork from my Trifecta meal prep plan to speed up the process even more! You can customize these in so many ways by changing your protein up, spices, fillings, etc.! Reasons to Love These

  • Delicious: Who doesn’t love taquitos? I don’t know a single soul.
  • Macros/Nutritious: These taquitos are made with fresh, clean ingredients and are full of protein!

Ingredients

  • Pork – I used 16 oz. of cooked pulled pork that I had on hand from my Trifecta meal prep plan (highly recommend if you need some help in the kitchen on those busy days!)
  • Garlic – 3 teaspoons of garlic, minced.
  • Yellow Onion – 1/2 of a medium yellow onion, diced.
  • Cumin – 2 teaspoons of ground cumin.
  • Oregano – 1 teaspoon of dried oregano.
  • Chili Powder – 1 teaspoon.
  • Cayenne Pepper – 1/2 teaspoon of cayenne pepper, or to taste.
  • Salt & Pepper – To taste.
  • Mexican Cheese – 1 cup of shredded Mexican cheese, or cheese of choice!
  • Cilantro – 1/4 cup finely chopped fresh cilantro.
  • Salsa Verde – 1/3 cup of green salsa verde.
  • Lime – Juice of 1 lime.
  • Avocado Oil – 2 tsp. avocado oil plus olive oil spray for tortillas
  • Tortillas – 30 6-inch corn tortillas.

How To Make Them

  1. In a large skillet, sauté onion & garlic in 2 tsp avocado oil until tender. Add the spices; cook 1 minute longer. Add the pork, cheese, cilantro, salsa & lime juice. Cook until cheese is melted.
  2. Warm up your tortillas in the oven at 200°F or so with a spritz of avocado oil spray as you roll your tortillas. This will prevent them from breaking apart when you roll them up!
  3. Divide filling among tortillas & roll up tightly. Place taquitos on a foil lined baking sheet. Bake at 400°F for 10 minutes.
  4. Serve with your favorite sides and enjoy!

👍Tip: You can use toothpicks while baking to help keep your taquitos from unrolling.

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for a minute and a half or so! OR, if you want them to stay crispy and you have the time, pop them in the air fryer or oven for 10 minutes or so at a low heat.
