Lemon & Herb Quinoa

This Lemon & Herb Quinoa is such an easy and flavorful side dish! This quinoa has the perfect amount of tang to it and is full of healthy ingredients. It practically goes with any meal! Serve this Lemon & Herb Quinoa with my healthy lemon grilled chicken for the ultimate nutritious & delicious meal!

Quinoa is full of antioxidants, which contributes to a decreased risk of heart disease. It is also known to help with cholesterol & blood sugar levels. Quinoa is also very filling and sticks with you!

This recipe makes 10 servings, so it is great for meal prepping! Half this recipe of course though if you do not need to make that much. I make a lot of this to go with any of my grilled chicken recipes when I make this for the work week.

Ingredients

  • Quinoa – Could have guessed that one right? I used 2 cups of tri-colored organic quinoa, but feel free to use your favorite kind!
  • Olive Oil – 1 tablespoon of extra virgin olive oil to sauté your quinoa. This gives the quinoa a little crunch and I love it.
  • Water – 3 cups of water.
  • Oregano, Parsley, & Salt – 1 teaspoon of each. I used dried herbs, but you can definitely use fresh too if you have that on hand!
  • Thyme, Rosemary, & Pepper – 1/2 teaspoon of each. I used dry herbs but I did top my quinoa with some fresh rosemary I had for garnish.
  • Lemon Juice – 4 to 5 tablespoons of fresh lemon juice, depending on how strong you want the lemon flavor to be!
  • Lemon Zest – Zest of one large lemon.

How To Make It

  1. Heat the olive oil in a medium saucepan over medium/high heat.
  2. Add the quinoa and sauté until quinoa is lightly toasted, stirring frequently, about 4 minutes.
  3. Pour in the water and the seasonings. Bring to a boil, reduce heat to low, and cover the saucepan with a lid. Simmer for 15 minutes.
  4. Turn off the heat and stir in the lemon juice and zest. Serve and enjoy!

How To Store Leftovers

You can store leftovers in the fridge for up to 6 days in the fridge with whichever meal you cook with this! Pop this quinoa in the microwave for about 30 seconds or so when you are ready to enjoy it again!
