How to Make Everything Bagel Grilled Cheese
- Make the scallion cream cheese. In a small bowl, mix the softened cream cheese and sliced green onions until well combined. Set aside.
- Toast the bagels. Melt the butter in a large skillet over medium heat. Place the bagel halves cut-side down and toast for 2–3 minutes, or until lightly golden. Remove them from the skillet and reduce the heat to low.
- Assemble the grilled cheese. Spread the scallion cream cheese over the cut side of each bagel half. Add a sprinkle of everything bagel seasoning, if desired. Layer the mozzarella, tomato slices, and red onion over the bottom halves, then place the remaining bagel halves on top.
- Grill until melty. Return the assembled bagels to the skillet over low to medium-low heat. Cover with a lid and cook until the mozzarella is completely melted and the outside of the bagels is warm and lightly crisp. Flip halfway through, if needed, so both sides heat evenly.
- Serve. Remove from the skillet, slice each grilled cheese in half, and enjoy immediately while the cheese is warm and melty.

Tips for the Best Bagel Grilled Cheese
Keep the skillet over low to medium-low heat once you assemble the sandwiches. The bagels are already toasted, so you want to give the mozzarella enough time to melt without burning the outside.
Covering the skillet with a lid is also key. It traps the heat and helps the mozzarella melt much faster.
Make sure your tomato slices are relatively thin so they warm through without making the sandwich too watery. You can also pat them dry with a paper towel before assembling if your tomatoes are especially juicy.
Variations & Substitutions
You can easily switch up this grilled cheese depending on what you have on hand. Try provolone, white cheddar, Monterey Jack, or a combination of cheeses in place of the mozzarella.
For extra protein, add sliced turkey, chicken, or an egg. You could also add spinach, arugula, avocado, or cucumber for more veggies.
If you love everything bagel seasoning, sprinkle a little extra over the scallion cream cheese before adding the remaining fillings.
What to Serve With Everything Bagel Grilled Cheese
This bagel grilled cheese makes an easy lunch on its own, but it would also be delicious alongside tomato soup, a simple side salad, fresh fruit, roasted vegetables, or your favorite crunchy snack.
How to Store & Reheat
This recipe is best served fresh while the mozzarella is warm and melty. If you do have leftovers, store them in an airtight container in the refrigerator for up to 2–3 days.
For the best texture, reheat the grilled cheese in a skillet over low heat or in an air fryer until warmed through. I would avoid microwaving it if possible because the bagel can become soft or chewy.

Frequently Asked Questions
Can you use a bagel for grilled cheese?
Absolutely. A bagel makes a great alternative to traditional sandwich bread for grilled cheese. Toasting the cut sides first gives you a crisp surface while the center stays soft enough to bite into.
What cheese goes well with an everything bagel?
Mozzarella works especially well because it has a mild flavor and melts beautifully without overpowering the everything bagel seasoning. Provolone, cheddar, Monterey Jack, and Swiss would also work.
How do you get the cheese to melt without burning the bagel?
Keep your skillet over low to medium-low heat and cover it with a lid. The trapped heat helps melt the cheese while preventing the outside of the bagel from browning too quickly.
Can I add protein to this bagel grilled cheese?
Yes! The Eat Royo Everything Bagel already provides 10 grams of protein per bagel, but you can add turkey, chicken, egg, or another protein of choice if you want to make the sandwich even more filling.
