These Spicy Chicken Bites are a healthy, low carb, and kid-friendly protein-veggie combo that everyone will enjoy! The ingredients are simple and inexpensive. These freeze fantastically, so double batch and freeze the extras. Bonus: They are Whole30, Paleo, and Keto friendly too. Woot woot!

These are very low in calories and high in protein as well. There are only 45 calories per patty and 6 grams of protein! I love these chicken bites because you get your protein & veggies all in one. It’s also a very quick and mess-free dish since it’s a one pan type of meal! Ingredients

For the Chicken

  • Chicken – 2 pounds of organic ground chicken.
  • Zucchini – 2 medium zucchinis.
  • Garlic – 3 cloves of garlic, minced.
  • Garlic Powder – 1/2 teaspoon.
  • Onion Powder – 1/2 teaspoon.
  • Cayenne Pepper – 1/2 to 1 teaspoon of cayenne pepper, depending on your desired level of spice.

  • Italian Seasoning – 1/2 teaspoon of Italian seasoning.
  • Salt – 1/2 teaspoon.
  • Pepper – 1/2 teaspoon.

How To Make Them

  1. Grate your zucchini, wrap it in a kitchen towel, and squeeze all of the liquid out very well.
  2. Combine the grated zucchini along with the remaining ingredients in a large bowl.
  3. Mold out 30 chicken patties with your hands. Preheat a large, nonstick skillet with a drizzle of olive oil over medium/high heat. I used my HexClad 12 Inch Hybrid Stainless Steel Frying Pan (AKA the best pan to ever exist).
  4. Cook each chicken patty for about 4 minutes on each side, or until fully cooked and they reach an internal temperature of 165°F.
  5. Serve with your favorite dipping sauce and enjoy!

What Sauce Do You Use?

I got a million questions on what sauce I used with these! I will be honest, this time I did not make this one from scratch. The sauce featured in the photos and video is simply just the Sir Kingstons Dijon Mustard, which is my favorite Dijon mustard ever! A Greek yogurt based ranch would be great too and I am going to be posting a copycat Chick-Fil A sauce recipe soon. To make a healthy ranch, just combine ranch seasoning and plain, nonfat Greek yogurt until you get your desired ranch flavor!

Can You Air Fry These?

Yes of course you can! If you want to air fry them instead, air fry at 390F for 10-12 minutes, flipping half way through. The air fryer that I use is the Ninja Stainless Steel Foodi 8qt. 9-in-1 Deluxe XL Pressure Cooker & Air Fryer.

What If I Don’t Like Zucchini?

This was a super popular question I got on Instagram! Some people were allergic to zucchini or just simply did not like it! You can use any vegetable, really! I think that riced broccoli or cauliflower would be great, or even a carrot/broccoli combo!

How To Store Leftovers

You can store your leftovers in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, pop them in the microwave for a minute to a minute and a half.
