  1. Sauté the Beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook for 6–7 minutes, breaking it apart with a wooden spoon, until browned.
  2. Add Veggies: Stir in the diced onion, red bell pepper, zucchini, and garlic. Cook for another 5–7 minutes, stirring occasionally, until the veggies are softened and fragrant & the beef is fully cooked.
  3. Season the Stir Fry: Sprinkle in oregano, basil, cumin, paprika, smoked paprika, salt, and pepper. Stir well and cook for 1–2 more minutes to bloom the spices.
  4. Finish with Tomatoes & Lemon: Add the cherry tomatoes and squeeze in the juice of half a lemon. Cook for another 2–3 minutes until the tomatoes begin to soften and release their juices.
  5. Top and Serve: Turn off the heat. Sprinkle with crumbled feta (if using). Serve with fresh parsley, lemon zest, and a generous dollop of tzatziki or hummus on top.
