Protein Breakfast Tacos

These Protein Breakfast Tacos are such a fun and creative way to get a lot of protein in for breakfast! I love me some regular protein pancakes, but these tacos take it to the next level. They remind me of a McGriddle from McDonalds but healthier! For this recipe, I used the Naked Cake Protein Pancake Mix to make my pancakes and filled my “tacos” with scrambled eggs, turkey sausage, a little bit of cheddar cheese, and a drizzle of sugar free syrup. This recipe makes 2 breakfast tacos. The macros below are for one breakfast taco (pancake, eggs, & sausage link). Adjust the macros accordingly depending on how much/if you decide to add shredded cheddar cheese and sugar free syrup.

Reasons to Love These Tacos

  • Quick & Easy: These are super and easy to make! You can even prepare all the pieces to these ahead of time and assemble them later.
  • High Protein: Each breakfast taco has a whopping 21 grams of protein. You can’t taste it and these do not have any sort of chalky taste from the protein powder at all!
  • Delicious: These seriously take like a McGriddle without any of the guilt attached to it.

Ingredients

  • Protein Pancake Mix – 50 grams of your favorite protein pancake mix. This was enough for me to make two large pancakes. I used the Naked Cake Protein pancake mix and the macros below are assuming this mix.
  • Almond Milk/Water – Your preferred liquid to add into your pancake mix.
  • Eggs 2 large eggs
  • Turkey Sausage – 2 links of turkey sausage, or your preferred sausage. You could also do bacon, ham, etc.!
  • Syrup – Sugar free syrup, optional
  • Shredded Cheese – Shredded cheddar cheese, optional.

How To Make Them

  1. Preheat a large griddle or skillet over medium heat with some nonstick spray or butter. Also preheat a small skillet to cook your sausage links in.
  2. Add your sausage links to your skillet to allow them to start cooking since they will take longer than your pancakes.
  3. In a small bowl, whisk together your eggs and set aside.
  4. In another small bowl, whisk together your protein pancake mix and liquid of choice to make your pancake batter. Set aside.
  5. Add your eggs to one section of your griddle to start scrambling them. Divide your pancake batter into two evenly sized pancakes on the other side of your griddle. Flip the pancakes after 2-3 minutes. Your eggs and sausage should be done at about the same time. You can melt some cheddar cheese on your eggs if you would like.
  6. Assemble your breakfast tacos. Top with sugar free breakfast syrup and enjoy!

Optional Variations

Here are some other variations you can try:

  • You can put some sugar free breakfast syrup on your pancakes after you pour your batter onto your griddle so that the syrup is embedded into the pancakes. This can make these a little less messy! You can still top with additional if you have an extra sweet tooth though 🙂
  • Switch up the syrup flavor or even top them with some nut butter, such as cashew, almond, or peanut. Prozis has some awesome flavors such as caramel pecan almond butter and you can use the code KATIE10 for 10% off on their site.
  • I mentioned this above, but you can substitute the sausage for any meat of choice!
  • Also mentioned above, but melting some shredded cheddar cheese on the eggs is SO good!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 3 days. I would keep all of the components separate and heat them up in the microwave separately though.
