Roasted Balsamic Green Beans & Cherry Tomatoes

These Roasted Balsamic Green Beans are such an easy and delicious side dish! They are roasted with slivered almonds, minced garlic, and parmesan cheese. Try pairing these Garlic Parmesan Roasted Green Beans with my healthy lemon grilled chicken or balsamic roasted mini meat loaves.

Ingredients

  • Green Beans – 32 ounces of fresh green beans, washed and dried.
  • Cherry Tomatoes – 16 oz. fresh cherry tomatoes, sliced in half.
  • Olive Oil – You will need 2 tablespoons of olive oil to coat your green beans in.
  • Balsamic Vinegar– I used 1 tablespoon of balsamic vinegar.
  • Salt, & Pepper – 1 teaspoon of each, or to taste.
  • Feta Cheese – 1/2 cup crumbled feta cheese.
  • Balsamic Glaze – 1 tablespoon of balsamic glaze. Be sure to get a sugar free one!

How To Make It

  1. Preheat oven to 400°F. Line a large baking sheet with foil or a silicone baking mat.
  2. Combine the green beans, cherry tomatoes, olive oil and balsamic vinegar on your baking sheet. Season with salt and pepper to taste.
  3. Bake for 20 minutes. Immediately top with feta cheese and balsamic glaze.
  4. Serve and enjoy!!!

How To Store Leftovers

You can store leftovers in the fridge for up to 4 days in an airtight container with whichever meal you cook with these! These veggies reheat very well when you place them in a toaster oven!
