What You Will Need

For the Base:

  • 2 cups organic almond flour

  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp grass-fed butter (softened, can also use coconut oil if you prefer)
  • 4 tbsp Greek yogurt (plain, nonfat)
  • 2 organic eggs (large)
  • 1 tsp vanilla extract

For the frosting:

  • 4 oz. organic cream cheese (softened)

  • 1/4 tsp vanilla extract
  • 2-3 tsp unsweetened almond milk (until you get your desired consistency)

How To Make Them

  1. Preheat your oven to 325°F. Line an 8×8 inch square baking dish with parchment paper.
  2. In a large bowl, whisk together almond flour, protein powder, monk fruit sweetener, baking powder, and salt.
  3. Add in the eggs, softened butter, Greek yogurt, and vanilla extract. Mix until smooth with a rubber spatula. The batter will be thick.
  4. Spread the batter evenly in your prepared baking dish.
  5. Bake for 20–25 minutes or until the center is puffed up and the edges are lightly golden. Allow the bars to cool completely.
  6. While the bars cool, make the frosting. In a small bowl, combine softened cream cheese, protein powder, vanilla extract, and monk fruit sweetener (if desired). Add almond milk slowly, one teaspoon at a time, until you reach a smooth, spreadable consistency.
  7. Once the bars are fully cooled, frost them evenly. Optional: Add festive red, white, and blue sprinkles for a patriotic touch!
  8. Slice into 9 large squares or 12 medium squares.
  9. Refrigerate for at least 30 minutes to set, then serve chilled!
