Air Fryer Low Carb Lemon Chicken Bites

These Air Fryer Low Carb Lemon Chicken Bites are tender, tangy and have the most perfect crispy bacon-y outer edges. There are no carbs per serving and 39 grams of protein! These work great as a main course or a snack/appetizer!

Ingredients

  • Boneless, Skinless Chicken Breasts – You will need 2 pounds cut into bite size pieces.
  • Lemon Juice – 1/4 cup of freshly squeezed lemon juice.
  • Olive Oil – 1/2 a tablespoon of extra virgin olive oil.
  • Garlic Powder & Onion Powder – 1 teaspoon of garlic powder and 1/2 teaspoon on onion powder.
  • 5 Pepper Sea Salt – You only need a little bit because of the sodium content in the bacon, but I used 1/2 a teaspoon.
  • Lemon Pepper Seasoning – 1/2 a teaspoon to enhance the lemon flavor.
  • Bacon – You will need 3 slices of bacon of choice, cut into smaller pieces to wrap around your chicken bites.

How To Make It

  1. Combine the chicken bites, lemon juice, olive oil, and seasonings in a large mixing bowl. Marinate overnight, or for at least 2 hours.
  2. Preheat your air fryer to 400°F.
  3. Wrap random pieces of the bacon around the chicken. Note that a piece does not go around every piece. Less than half of your chicken bites will have a wrapped around it.
  4. Place your chicken bites in the air fryer, spray with  non-stick spray, and air fry at 400 for 20 minutes. You will need to do 2-3 separate batches depending on how big your air fryer is for the chicken to cook evenly.
  5. Top with chives and a squeeze of lemon juice and enjoy!!

How To Store Leftovers

You can store your leftover buffalo chicken bites in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so. If you want them to be more crispy, you can also reheat them in the oven. Place your chicken in the oven at 325°F for 10 minutes, or until completely warmed.
