This Skinny Strawberry Pretzel Dessert is made with layers of pretzels, low fat cream cheese, sugar free cool whip, and sugar free strawberry jell! There is no added sugar, only 95 calories per slice, and just as delicious as the traditional version!

You would never guess that this is a low calorie, and no added sugar dessert!

I have also created a low carb version using crushed pecans instead of pretzels for those of you following a low carb diet! I hope you give this recipe a try and it becomes a new family favorite! Be sure to try my Low Carb Angel Food Cake as well!

What You Will Need

  • 1 11×7 Inch Glass Baking Dish – To bake your strawberry pretzel dessert in. Be sure to put a little bit of  non-stick spray in it.
  • Pretzel Sticks – You will need 3 ounces of slightly crushed pretzels. If you are wanting to make the lower carb version, you will need 3 ounces of crushed pecans.
  • Sugar Free Syrup – 3 teaspoons of any sugar free breakfast syrup to hold the pretzel crust together.
  • Cream Cheese – 8 ounces of low fat cream cheese for your creamy center.
  • Swerve – 1/3 cup of granulated Swerve. Swerve is my go-to when it comes to sugar substitutes. If you are not familiar with Swerve, it is a zero-calorie, low-glycemic sweetener that measures cup-for-cup to sugar. It’s completely save and natural, with no artificial ingredients, preservatives or flavors. It is safe for diabetics and Keto approved. You can purchase Swerve off of Amazon here.
  • Sugar Free Cool Whip – You will need an 8 ounce tub of sugar free cool whip for your creamy center as well.
  • Sugar Free Strawberry Jel Mix – This is a key ingredient to this dessert. I used a .7 ounce package by the brand Simply Delish, which is the only company I will buy sugar free pudding & jell mixes from. All of their products are sugar free, keto friendly, and plant based. You can actually use the code “KATIE10” for 10% off on their website here!
  • Boiling Water– You will need 2 cups to make your strawberry jell topping.
  • Cold Water – 1/2 cup to also make your strawberry jel topping with.
  • Strawberries – I topped by dessert off with 5 sliced fresh strawberries. This is optional of course, but SO good!

How To Make It

  1. Preheat oven to 350°F.
  2. Mix together the boiling water and jell mix. Stir in the 1/2 cup of cold water. Place in the fridge to cool while you are getting the other layers ready.
  3. Place the pretzel pieces (or pecans if doing the low carb option) in a medium bowl. Add the 3 tsp of sugar free syrup to the pretzels. Mix together until the syrup is on all of the pretzels.
  4. Spray an 11×7 inch glass baking dish with non-stick spray. Spread the pretzels evenly across the dish. Bake for 5 minutes, then let it cool completely before adding your other layers.
  5. In a medium bowl, blend together the cream cheese and swerve with a hand mixer until smooth. Gently fold in the sugar free Cool Whip.
  6. Spread the cream cheese layer evenly on top the pretzel layer.
  7. Finally, spread the strawberry jell evenly over the cream cheese layer. Top with strawberries.
  8. Refrigerate for 2 hours or until jell is completely set. Enjoy and try not to eat it all in one sitting!

How To Store Leftovers

If you end up having any leftovers, you can store them in an air tight container in the fridge for up to 3 days. It can last longer than that, but I find that after three days the pretzels absorb a lot of liquid and become soggy.

The macros below in the actual recipe are for the version using the pretzel sticks as the base. Here are the macros for the carb friendly version using pecans:
