Buffalo Chicken Burritos

These Buffalo Chicken Burritos are a meal prep must! They are low carb, low calorie, and packed with protein! They are also very easy to make and require very minimal ingredients (only 7!). Low carb tortillas have really changed the game for me! I am able to create so many popular dishes that are known to be calorie and carb heavy and turn them into delicious, cleaner meals!

This are one of my husbands favorite meals to take with him for lunch during the week!! He is one of those people who is obsessed with buffalo sauce haha. Anything I make with buffalo sauce is typically gone within 2 or 3 days!! These are great for lunch because they do not make you feel stuffed or too full. They have a good amount of protein to hold you over until dinner with a healthy side! I love having celery or protein chips with these burritos.

Reasons to Love These Burritos

  • Prep Ahead of Time: You can prep these burritos the night/day before so that all you have to do the next day is plop your wrapped burrito in the oven. You can make a whole bunch of them in advance and freeze them as well.
  • Quick & Easy: These are so quick and easy to make, and require very simple, minimal ingredients.
  • Macros: Each burrito has 25 grams of protein and only 6 grams of net carbs!! One burrito is only 175 calories too like what?!

Nutritional Benefits

  • Chicken: Chicken is low in calories and high in protein! It is a good source of Vitamin B12 and choline, which is essential for brain development and function. It can help with weight management and decrease your chance of heart disease.
  • Cottage Cheese: Cottage cheese contains protein and is an excellent source of calcium (bone health!).
  • Carb Counter Tortillas: Low carb tortillas are packed with fiber, which helps with digestion.

Ingredients

  • Chicken – 2 pounds of boneless, skinless chicken breasts or your favorite type of chicken, cooked and shredded. I always use breasts because they are healthier and low in fat. I seasoned mine with onion powder, paprika, garlic salt, and pepper to taste.
  • Buffalo Sauce – 1/2 cup of your favorite buffalo sauce, such as Franks, Primal Kitchen, or Sweet Baby Ray’s.
  • Cottage Cheese – 1 cup of 1% small curd cottage cheese. Small curd cottage cheese will blend faster and the 1% will be lower in fat!
  • Cheddar Cheese – 1/2 cup of mild shredded cheddar cheese.
  • Ranch Seasoning2 to 2 and a half tablespoons of ranch seasoning, depending on how strong of a flavor you want!
  • Green Onions – 1 bunch of green onions (about 5), chopped (whites only.
  • Carb Counter Tortillas – 10 carb counter tortillas of choice. More details on these below, but I use the brand La Banderita.

Instructions

  1. In a small blender (I used my nutribullet), blend the cottage cheese, Buffalo sauce, and ranch seasoning until creamy.
  2. In a large bowl, mix the sauce and your cooked chicken together until all the pieces of chicken are coated in the sauce.
  3. Stir in the shredded cheddar cheese & green onions.
  4. Divide the Buffalo Chicken mixture among the Carb Counter tortillas and roll up your burritos (also add some coleslaw mix if desired).
  5. This is optional, but I seared my burritos in a nonstick pan on my stove to help them stay closed up!
  6. Enjoy!! Serve with some Greek yogurt ranch dressing. Wrap up your leftovers in foil. To reheat, place them in the oven from refrigerated at 350°F for 12 minutes in the foil.

What Kind Of Tortillas Do You Use?

My favorite low carb tortillas are by the brand La Banderita, but I also like the Mission Carb Balance tortillas! The La Banderita Tortillas are SO soft & delicious. They are the perfect bread alternative when you’re counting carbs! With 11 Grams of dietary fiber, you get only 4 Net Carbs and only 45 calories per tortilla! They are also sugar free and perfect for a Keto/low carb diet! They don’t contain any trans fat or cholesterol…I could literally rant all day long about how much I love low carb tortillas haha! They are versatile enough to use in all of your favorite low carb recipes. I even make sweet dishes such as my low carb cinnamon bites with these tortillas!

How To Store Leftovers

You can store your leftovers that you plan on eating soon in an airtight container in the refrigerator for up to 4 days. I suggest reheating these in the oven/a toaster oven at 350°F for 12 minutes so the tortilla does not get soggy. Any leftovers you are saving for later down the road I would suggest freezing! Make sure they are wrapped tightly in foil and then placed in a freezer bag. Let them defrost in the fridge the day before you want to enjoy them and bake them in the oven. You can bake from frozen, but just allow for a longer time in the oven.
