These Coffee Protein Frozen Yogurt Bars are an easy, high protein, and refreshing sweet that gives you a little boost of energy at the same time! No one will believe you when you tell them that these are healthy let me tell you! Each fro yo bar has 15 grams of protein woot woot! They are so quick to make and require very basic, minimal ingredients. I love having a little crunch in my ice cream bars so I added the Nudge coffee bomb snacks and it really topped these guys off!! What You Will Need

For the Filling

  • 1 cup plain, nonfat Greek yogurt
  • 1 shot espresso (just under 1/8 cup for reference)
  • 1/8 cup creamy almond butter
  • 30g protein powder of choice
  • 1-2 tbsp. maple syrup/sweetener of choice

For the Shell

  • 100g sugar free dark chocolate chips with 1/2 tsp coconut oil, melted

How To Make Them

  1. In a medium sized mixing bowl, combine the Greek yogurt, espresso, almond butter, protein powder, and maple syrup.
  2. Pour into 4 ice cream bar mold(s).
  3. Freeze for about 4 hours.
  4. Melt the chocolate and coconut oil together in the microwave. Dip the frozen yogurt bars in the melted chocolate and freeze for another 10 minutes so set. Enjoy!

How To Store Them

Store your leftover frozen yogurt bars in an air tight container in the freezer or wrapped up tightly in parchment paper. Allow them to thaw for 10 minutes or so before you eat them again to get the perfect texture!
