How to Make a One-Pan Breakfast Bagel Sandwich

  1. Whisk the eggs and milk together in a small bowl until well combined. Set aside.
  2. Heat a medium skillet over medium heat and add a small amount of butter.
  3. Slice the bagel in half and place both halves cut-side down in the skillet. Keep the edges of the bagel halves touching or very close together to make flipping easier.

  5. Season with salt, black pepper, and red pepper flakes to taste.
  6. Cook until the eggs are set enough to flip without falling apart.
  7. Using a large spatula, carefully flip the bagel and egg mixture over together.
  8. Fold any egg extending beyond the edges of the bagel inward toward the center.
  9. Add the cheddar cheese, cooked turkey bacon, avocado, and any other desired fillings.
  10. Place one bagel half on top of the other to create your breakfast sandwich.

Breakfast Bagel Filling Ideas

One of the best things about this one-pan breakfast bagel sandwich is how easy it is to customize. You can make a different combination every time!

Protein: Turkey bacon, chicken sausage, turkey sausage, ham, bacon, or Canadian bacon.

Cheese: Cheddar, pepper jack, mozzarella, Swiss, provolone, feta, or your favorite sliced cheese.

Veggies: Spinach, bell peppers, onions, mushrooms, tomatoes, or jalapeños.

Extras: Avocado, hot sauce, salsa, pesto, everything bagel seasoning, or fresh herbs.

You can also keep it simple with just egg and cheese for an easy breakfast bagel that comes together even faster.

Tips for the Best Skillet Breakfast Bagel

Keep the bagel halves close together. Place the two halves right next to each other in the skillet. This makes it much easier to flip the bagel and eggs together.

Don’t flip too early. Give the eggs enough time to set before attempting to flip everything. If they’re still too runny, the egg mixture can fall apart.

Use a large spatula. A wide spatula makes flipping the bagel and eggs much easier.

Cook your meat first. Turkey bacon, sausage, bacon, or other breakfast meats should be fully cooked before adding them to the sandwich.

Turn the heat down after assembling. Low heat allows the cheese to melt and the sandwich to warm through without burning the bagel.

How to Make It Higher in Protein

This breakfast bagel already gets protein from the eggs, bagel, cheese, and turkey bacon, but it’s easy to add even more.

Try adding extra turkey bacon, chicken sausage, turkey sausage, ham, or additional egg whites. You can also replace one of the whole eggs with additional egg whites if you prefer.

Storage & Meal Prep

This one-pan breakfast bagel sandwich is best enjoyed fresh from the skillet, especially when using avocado.

For an easy meal-prep option, prepare your fillings ahead of time. Cook your turkey bacon or sausage, slice your vegetables, and store everything separately in airtight containers in the refrigerator.

When you’re ready for breakfast, cook the bagel and eggs fresh in the skillet, add your prepared fillings, and your breakfast is ready in minutes.

Turkey bacon, sausage, ham, cheese, avocado, spinach, peppers, onions, hot sauce, salsa, and pesto are all great options.

Can I make this breakfast sandwich ahead of time?
You can, but I recommend making the bagel and eggs fresh for the best texture. Prep your fillings ahead of time so the sandwich only takes a few minutes to put together in the morning.
