These Garlic Butter Smashed Sweet Potatoes are a spinoff of the famous classic smashed potatoes all over social media! I love sweet potatoes so much more, so I decided to do a spinoff with them and make my own garlic butter to top them with! These potatoes are gluten free and vegetarian friendly. My main seasoning that I use in these potatoes is the Dan-O’s Everything Bagel Seasoning. It may sound weird to put in sweet potatoes but trust me…it is SO good! Nutritional Benefits

  • Sweet Potatoes: Sweet potatoes are a great source of fiber, vitamins, and minerals. They help support good gut health and support your immune system as well!

Ingredients

  • Olive Oil – A light drizzle (about 1 tablespoon)
  • Sweet Potatoes – 3 large sweet potatoes (roughly 3 pounds), sliced into quarters. 🤞Tip: Use long sweet potatoes to make your cuts easier!
  • Butter – 2 1/2 tablespoons of melted butter.
  • Garlic – 4 cloves of garlic, minced (about 4 teaspoons)
  • Parsley – 2 teaspoons of dried parsley.
  • Dan-O’s Everything Bagel Seasoning – 2 teaspoons (or more) of Dan-O’s Everything Bagel Seasoning – Use the Code COOKINGKATIE for 10% off!
  • Parmesan Cheese – 2 tablespoons.

How To Make Them

  1. Preheat your oven to 400°F. Line 2 large baking sheets with foil or parchment paper and put a light drizzle of olive oil or some nonstick spray to prevent sticking.
  2. Lay your sweet potato pieces flat on the baking sheets. Make sure none are overlapping/stacked on top on each other. Drizzle with the olive oil & season with everything bagel seasoning.
  3. Bake for 25 minutes, or until they are soft enough to “smash”.
  4. Use a fork to lightly smash each piece. Don’t push too hard or they will break apart and be mashed!
  5. Mix together the butter, garlic, and parsley. Brush this mixture among the tops of the potatoes.
  6. Turn your oven onto broil and broil until the edges start to crisp, about 5 minutes.
  7. Sprinkle the Parmesan cheese on top immediately after removing from oven. Allow to melt and enjoy!

How To Store Leftovers

You can store your leftovers in an airtight container in the refrigerator for up to 4 days. When you are ready to enjoy them again, just pop them in the microwave for 45 seconds or so. You can also heat them up in the oven to keep them more crispy at 250 for 15 minutes or so!
