Greek Lemon Grilled Chicken

This healthy Greek Lemon Grilled Chicken is juicy, tender, marinated in a delicious lemon marinade, and topped with fresh feta cheese. This is one of the easiest, most delicious, and healthy grilled chicken recipes you will ever have. This recipe is a perfect family dinner and great for meal prepping! This chicken is low carb and low calorie too! There are only 215 calories and 2 grams of carbs per 4 oz. serving. Ingredients

  • Chicken Breasts – 32 ounces (2 lbs.) of boneless, skinless chicken breasts.
  • Olive Oil – 1/3 cup of extra virgin olive oil for your marinade.
  • Lemon Juice – 1/4 cup of freshly squeezed lemon juice (about 2 lemons).
  • Lemon Zest – The zest of two large lemons. Lemon zest is key to bringing out the lemon flavor!!
  • Garlic – I used 3 teaspoons of minced garlic but measure with your heart!
  • Oregano – 2 teaspoons of dried oregano.
  • Paprika – 1 teaspoon of paprika.
  • Garlic Salt – 1 teaspoon, or to taste
  • Lemon Pepper – 1 teaspoon of lemon pepper, or to taste.
  • Feta Cheese – 5 ounces to top off the chicken breasts
  • Cilantro – Fresh chopped cilantro for extra flavor and garnish. You can use parsley too, if you prefer!
  • Lemon Wedges – For garnish and to add extra lemon to your dish.

How To Make It

  1. In a large mixing bowl, whisk together the lemon zest, lemon juice, olive oil, garlic, and all of the spices. Reserve 1/3 cup of the marinade for later.
  2. Add the chicken breasts to your remaining marinade. Cover and place into the fridge for a minimum of 30 minutes or up to 4 hours. The longer it marinates, the better!
  3. Heat a nonstick grilling pan (mine is by Anolon) or grill over medium-high heat with a drizzle of olive oil. Place the chicken into the pan and cook for about 5 minutes on each side. Sear each side by pressing down on the breasts slightly until the breasts are golden brown.
  4. Pour your reserved marinade over your chicken breasts. Top with the feta cheese, cilantro, lemon wedges, and anything else you would like!

How To Store Leftovers

You can store your leftover chicken in an air tight container in the fridge for up to 4 days. When you are ready to enjoy your leftovers, just pop them in the microwave for a minute or so.
