We’ve all heard about Thin Mints and Samoas stealing the spotlight, but there’s something about those sweet and tangy Savannah Smiles that I just can’t resist. If you’re craving those zesty, lemon Girl Scout cookies covered in powdered sugar, but want to keep things on the wholesome side, this recipe is for you! The Savannah Smiles Girl Scout Cookies had a very special place in my heart (and my stomach) when I was younger. Zesty, lemon-flavored cookies dusted in powdered sugar I mean what’s better than that? But we all know that these are not the best for you, so of course I made a healthier version! My version of the Savannah Smiles are made with 7 simple, wholesome ingredients. They are also gluten and refined sugar free

Side note – Has anyone seen these lately at Girl Scout cookie stands? I feel like they don’t even sell these anymore!!

And please don’t judge me on my cookie shaping skills. I promise they taste way better than they look! Thomas told me that they looked like cashews HAHAH.

Why You’ll Love These Cookies:

Fun and Easy to Make: If you’ve ever wanted to make your own Girl Scout-inspired cookies but didn’t want to go through all the hassle of the real deal, this recipe is quick and simple. Plus, you can enjoy them fresh out of the oven!

Gluten-Free and Refined Sugar-Free: These cookies are naturally gluten-free thanks to the almond and coconut flour combo, and they’re sweetened with maple syrup and a touch of powdered erythritol. That means no refined sugar, but you still get all the flavor!

Zesty and Refreshing: If you love that tart lemon flavor, these cookies will make your taste buds dance. The lemon zest and juice give them the perfect amount of citrusy kick without being overwhelming.

A Healthy Treat: Whether you’re watching your sugar intake or just looking for a healthier way to satisfy your sweet tooth, these cookies are a guilt-free way to indulge.

Why Choose Almond Flour?

Almond flour is a game-changer in the baking world. Unlike traditional wheat flour, almond flour is naturally gluten-free, making it perfect for those with gluten sensitivities or celiac disease. It’s also lower in carbs and higher in healthy fats and protein, which helps to keep you full longer. Plus, almond flour gives baked goods a moist and tender texture that wheat flour just can’t match. It’s a pantry staple for anyone looking to make their baking healthier without compromising on flavor.

Ingredients:

  • 2 cups almond flour (organic)
  • 1/4 cup powdered monk fruit
  • 1/4 tsp salt
  • 6 tbsp butter (grass fed, softened)
  • 1/2 tsp vanilla extract
  • Zest of 2 lemons
  • Juice of 1/2 lemon
  • 1/4 tsp lemon extract (optional if you want them super lemony)

How To Make Them

  1. Preheat the oven to 325°F (163°C). Line a large baking sheet with parchment paper and set aside.
  2. In a medium mixing bowl, combine the dry ingredients. Add the wet ingredients and mix until a thick dough forms and all components are fully incorporated. Be careful not to overmix.
  3. Using your hands, shape the dough into small half-moon or smile-like shapes. No special tools are needed for this step. The dough should yield approximately 30 cookies.
  4. Arrange the shaped dough on the prepared baking sheet. The cookies can be placed close together as they do not spread during baking. Bake for 12 minutes, or until lightly golden.
  5. Allow the cookies to cool on the baking sheet for 15 minutes to firm up. Once cooled, dust with additional confectioners’ style monk fruit sweetener and enjoy!
